Tortellini with a tomato sauce

This post isn’t really about cooking really, it is about making the most of leftovers.
The tortellini is from a deli – with a cheese and mortadella stuffing – and the sauce is just the remainder of the creamy tomato and mushroom sauce from last night’s chicken dish, garnished with some chopped parsley and freshly grated Parmesan cheese.
I like being frugal with food, I was brought up not to waste food and I still tend to hang on to leftovers and use them in other dishes.
