Ham and eggs

A much lighter breakfast than the Full English.

I am lucky enough to have a work colleague who keeps chickens, which means that I have access to the freshest eggs possible. Eggs laid by chicken who live outdoors and eat worms and insects along with their feed.

This breakfast is a stripped down alternative to Eggs Benedict.

Toasted and buttered muffins, topped with a few slices of Black Forest smoked ham that have been seared briefly in a frying pan and topped off with lovely fried eggs.
