Bambi Burger!

Venison cheeseburger with guacamole

Tonight was a simple dinner.

Venison burgers with sliced Edam cheese on toasted crusty rolls with shredded lettuce and home-made guacamole, garnished with a chilli and tomato relish and Dijon mustard.

The burgers were bought, but pretty reasonable all the same.

My guacamole recipe is reasonably authentic;

2 ripe avocadoes, mashed coarsely
4 spring onions, finely chopped
2 tomatoes, seeded and diced
the juice of one lime
a chopped small bunch of fresh coriander
sea salt
ground black pepper
extra virgin olive oil

You just mix everything together.

Usually I’ll add in a chopped chilli or two but I wanted it without the extra heat today.
