Chorizo and potato hash with fried egg

I like to keep a couple of chorizo sausages in the fridge, they are useful in so many dishes, like this one.

It is one of those “let’s use up some odds and ends” type dish; a simple hash of diced onions, chopped garlic, red and orange peppers, diced chorizo, cubes of potato, pimenton, salt, pepper and chopped green coriander, all sautéed together in olive oil until the potatoes are done and served with a fried egg.

In the picture I have added some sourdough toast and drizzled the dish with some piri piri sauce.

It is a nice quick mid-week evening meal or a great weekend brunch dish.
