Filo chicken pie

I decided to use up the rest of last night’s chicken and the leftover gravy, carrots and potatoes. So I made a pie using filo pastry.

To the diced chicken, gravy and vegetables, I added some chopped and sautéed mushrooms, a tablespoonful of curry powder and a handful of chopped parsley, mixed it all together and used this as the filling.

Not a difficult dish but pretty tasty really and it didn’t need any accompaniment apart from a mixed salad.

I also could have made little rolled up cylindrical pies or maybe triangular ones but this was the quickest and simplest for a Monday evening meal.
