I was looking back through my posts and noticed that I had drafted this post ages ago but never posted it.
It isn’t a complicated recipe, just a simple pea, potato and carrot curry with basmati rice.
It can be served as a side dish with a meat curry or used as a filling for samosas.
All you do is fry off some chopped onion, garlic, ginger and green chillies until soft and then add diced potatoes and carrots and some frozen peas and chooped tomatoes and stir in.
Then you add in a curry paste made from some ground cumin, coriander, turmeric and chilli powder mixed with a little water, stir well and fry off for a few minutes, before adding some hot water and simmering covered until the vegetables are soft. You can garnish with chopped coriander if you wish.
