Once again, I find myself not having posted anything for ages. Of course, that doesn’t mean that I’ve been starving myself, it just means that I’ve been cooking things that I’ve written about before. After a while, blogging recipes becomes a bit difficult without lots of repeats, so here are some pictures of what I’ve been eating recently.
First off, here is one with no cooking at all, a slice of paté de campagne with toasted sourdough baguette and a bit of salad. Terrific with a glass of Beaujolais.
Next, here is one of my absolute favourites, half a roasted spatchcocked chicken with roasted new potatoes, served with a green salad and gravy made from the roasting pan juices and white wine.
Next, turkey breast saltimbocca, with extra crisply-fried Parma ham and sage leaves as a garnish, served with cavalo nero, roasted new potatoes and a Marsala gravy.
Finally, my version of Waterzooi, a Belgian casserole, made with a creamy beer-based sauce, chicken, mushrooms, carrots and leeks, served with creamy mashed potatoes and green beans.
None of these things are at all complicated or difficult to cook and I would call all of them comfort food, well, I find them comforting to eat.
