Chicken and ham quesadillas with salad

We had this tonight, another simple mid-week dish.

The quesadillas were made with a previously roasted chicken breast, sliced thinly, some slices of cooked ham, grated Emmenthal cheese, chopped sweet green peppers and a liberal splash of Cholula chilli sauce.

Folded in half, each quesadilla was then fried in some hot sunflower oil, pressing the edges down to make a bit of a seal to stop the stuffing from escaping.

Served with a simple mixed salad, these were tasty and satisfying without leaving you feeling stuffed full.
