Chicken and Rice

This was what we had for dinner last night

Chicken breasts, stuffed with sun-dried tomato paste and Provolone cheese, seasoned with salt and pepper and roasted in olive oil and a big squeeze of lemon juice.

I served it with plain white rice and a creamy mushroom, shallot and garlic sauce with dry Marsala.

We drank a lovely 2008 St Nicolas de Bourgeuil with it.

Pretty simple but really nice.

For pudding, we had Eton Mess, our first strawberries of 2010.
